This simple baked eggs recipe is bursting with flavor, thanks to a generous sprinkle of fresh chives and a hint of garlic powder. A delicate drizzle of half-and-half guarantees the eggs are luxuriously creamy, and the addition of cheddar cheese elevates the taste. Baking the mix in a square dish makes it a cinch to divide for a crowd. Pile the sliced, fluffy squares into flaky biscuits or English muffins, and enjoy the egg sandwiches at your next brunch gathering, or wrap them up for a convenient picnic.

Feel free to get imaginative with the flavors. Experiment with a blend of your preferred herbs, like thyme, parsley, or dill. And don’t hesitate to try different melty cheeses such as fontina, Colby jack, or pepper jack.
Ingredients:
– 1 spray of cooking spray
– 12 large eggs
– 1/4 cup of chopped chives
– 1/4 cup of half-and-half
– 1 3/4 teaspoons of kosher salt
– 3/4 teaspoon of garlic powder
– 1/2 teaspoon of ground black pepper
– 1/2 cup of grated sharp yellow cheddar cheese, plus 1/4 cup cheddar
Instructions:
1. Preheat your oven to 350°F (175°C). Coat a 9-inch (23 cm) square baking dish with cooking spray. Line the dish with parchment paper, allowing an overhang of 1 to 2 inches (2.5 to 5 cm) on two sides.
2. In a large bowl, whisk together 12 large eggs, 1/4 cup of chopped chives, 1/4 cup of half-and-half, 1 3/4 teaspoons of kosher salt, 3/4 teaspoon of garlic powder, 1/2 teaspoon of freshly ground black pepper, and 1/2 cup of grated sharp yellow cheddar cheese. Pour the mixture into the prepared dish and sprinkle the top with an additional 1/4 cup of cheddar cheese.
3. Bake for about 25 minutes, or until the eggs are just set. Let cool slightly before cutting into squares for serving.
Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Enjoy them warm or cold.
